Maple Syrup: A Canadian Delight
Maple syrup, otherwise known as ‘Canadian Gold,’ is a truly unique food product from a truly unique place in the world as it is only produced in the ‘Maple Syrup Belt,’ which encompasses the Canadian provinces of Ontario, Quebec, New Brunswick and even New Hampshire in the USA. While many people might see maple syrup as the Canadian counterpart to honey, the reality is that this sweet treat is very different and forms part of the fabric of what it means to be Canadian.
Canada is well known for the maple trees that cover the eastern part of the country and their beautiful leaves that change colour in fall. Their flag even has a red maple leaf as its centrepiece. However, the beauty of these seasonal changes is not the only reason that these special trees are held in such high esteem in the ‘Great White North.’
But how is this syrup made? To find out let’s take a look at the history of this food.Legend has it that a thousand years ago, an Iroquois chief who was hunting left a signal for his son to meet him by leaving his axe in a tree on top of a bowl. The bowl eventually filled up with a colourless liquid that came from the tree and later, when the chief went to heat up the water to make a bowl of deer stew, he had a sweet surprise! The liquid had turned into a sugary substance that we now know as maple syrup!
When the first European settlers reached Canada and started to learn from the Indigenous People, one of the best lessons that these newcomers learned was how to tap maple trees, collect the liquid in bowls and heat up the sap to make syrup. When these traditional methods met with European mechanical inventions, the process of making maple syrup became much faster through the use of drills for accessing the sap easier and iron pots for heating up the liquid. However, the most important technological advancement during this time was easily the implementation of heavy buckets to protect the precious liquid from strong winds and animals such as squirrels, mice and raccoons.
Even up to this day, the production of maple syrup remains a localised industry. While many of the processes involved in extracting and producing maple syrup are automated, there is still a very strong sense of tradition and community in this area which can be seen by the fact that roughly 90% of these types of businesses are multi-generationally family-run.
